I made these cookies for my family a few weeks ago, and they are BY FAR one of the most delicious confections I’ve whipped up in my kitchen. I’ve made them twice and each time they are better than I remember. Here’s the recipe:
Cookie Ingredients:
1 cup butter, softened
3/4 cup brown sugar
1/2 cup sugar
1 tablespoon molasses
1 teaspoon vanilla extract
2 eggs
2 generous cups all purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 1/2 cups quick oats
Filling Ingredients:
2 teaspoons hot water
1/8 teaspoon salt
1 (7 ounce) jar marshmallow cream
1/2 cup vegetable shortening
1/3 cup powdered sugar
1 teaspoon vanilla extract
Method:
Preheat oven to 350.
Prepare cookies like any other basic cookie. Cream butter and sugars together until fluffy. Add in molasses, vanilla and eggs. Mix until incorporated. Slowly add flour, salt, baking soda and cinnamon, then stir in oats.
Drop onto baking sheet in large uniform tablespoons. Bake until set, but don’t overcook as you want a chewy cookie, about 10 minutes.
While cookies are baking, make the filling.
In a small bowl, dissolve salt in the hot water.
Combine marshmallow cream, shortening, powdered sugar and vanilla in mixer. Beat on high until fluffy, then add in the cooled salt water and mix well.
After cookies have cooled, assemble into these sweet little pies.
